For a cleaver, check out Action Sales in Monterey Park / City of Industry. They carry a very well respected HK cleaver (CCK). They’re indeed carbon iron. What’s really impressive is he’s using a full ~9″ Chinese chef/cleaver, not the 7″ half sized ones. They weigh like 2 lbs…
