Thai pesto salad with smoked salmon
It’s 9pm, and I have yet to leave my apartment today. I am one measly take-home exam away from being completely finished with grad school, and right now, I’m procrastinating like a mofo, indulging in the most inane distractions. For example, just a moment ago, I tenderly washed all the herbs and veggies I picked from my garden the other day. Then, I proceeded to arrange them by hue. The Dragon’s Tongue beans looked so pretty next to the Thai basil, that I felt inspired to make a pesto salad with chunks of house-smoked salmon from Shoop’s Deli. Total mismanagement of time right now, but at least my salad tasted good. OK, focus, focus, focus…
