penne: peas + prosciutto + pinenuts

pasta ingredientspenne prosciutto peas pine nutsI unwrapped an envelope of butcher paper from the fridge to find prosciutto that was just past it’s prime, so I decided to use it in a penne pasta dinner.  In keeping with the P’s, I tossed in two handfuls of peas and then finished it off with a sprinkling of pine nuts.  I made a vat of this stuff to get me through the week because it’s going to be a ridiculously busy one with deadline after deadline, competitions (with cash prizes!), presentations, mega catch ups, workplace wrap ups and not to mention, signing of new leases on apartments (and on life).
