zucchini crostini

zucchini crostini sun-dried tomato almondsA sweet lady at the garden gave me two humongous batons of zucchini squash to take home, so I decided to make some zucchini crostini with sun-dried tomato and almonds.

2 zucchinis, chopped
some olive oil
2 garlic cloves, minced
1 shallot clove, minced
basil, thyme or other herb
handful of almonds, chopped
sun-dried tomatoes, chopped
sliced bread
sour cream (or thick yogurt)

Toss garlic & shallot into a hot, oiled pan.  Dump in the zucchini and cook until on the cusp of tender.  Add the herbs, sun-dried tomato and almonds.  Stir, salt & pepper, then stir some more.  Grill, broil or toast some slices of bread.  Rub some raw garlic on the bread if you want to be fancy (or don’t bother).  Slather sour cream (or yogurt) onto the bread, then top with the zucchini mixture.
